If you like coconut (and don’t have a husband who curses them with the heat of a thousand suns), adding in a 1/4 cup of that is a tasty option. (<—-i.e. 1 3/4 cp oats, 1/4 cp flaked coconut whole or chopped), so is adding in chocolate chips or topping with a little drizzled choc.

You know those delicious butterscotch-and-peanut-buttery rice Krispie treats sometimes slathered in chocolate? These are the energy bite version.

I used to devour those Krispie delicacies like air, hovered over Ian’s aunt’s Christmas platter of them like a ravenous vacuum, and —foolishly thinking sugar was superior to corn syrup— learned how to make my own homemade caramel and butterscotch for the batches I ate by the handful. There’s a kitchen science and visual thrill to taking solid sugar and watching it heat to a point of brown liquid, but that same brain now skips on the visuals of what that refined junk is doing to the bodies of the ones I love, and I haven’t had one of those non-nutritional nuggets in years.

In the meantime, we’ve been making your typical cocoa-powder-and-nutbutter energy bites to scratch the itch of snacking —yet always making sure we’re adding beneficial code— and I kept craving butterscotch.


Kitchen wizarding and reverse engineering flavors are my heart’s delight (it’s a puzzle with math, senses, and the end result is good food! Win Win!) yet it's been taken to a new dimension with the added fun layer/hurdle of doing so with the intention of environmental and nutritional balance. I fiddled with some pantry staples, and now have a great plant-based sauce that has all the rich, caramelized, creamy taste of butterscotch, but it’s actually kind to the environment, your body, and cows. <——Should be noted: one of those links is from the Humane Society. How many animal-loving empaths out there have swirly hearts for dogs and cats, but are hardened to the average cow who is over-produced so she can breastfeed you through adulthood at the risk of your health, our waterways, and the planet? (**Hears all the souls taking a deep breath to say they get all their dairy from some humane farmer up the road, when they very well know that they are not the average human, and even those local farmer cows are wasting more resources than they give back to us calorically, and all the same a baby animal is getting deprived milk meant for it**) Ruminate for a moment on the harmful hypocrisy of that: own it or move forward. (We moved forward.)

If you’re thinking, “Geez, I wish she’d lighten up on all the environmental/compassionate stuff!”, I’ll remind you that we’re in a planet’s-on-fire! situation, we’re eating ourselves into a pit of poor health and environmental harm, and I’ve made it my life’s purpose to wake as many folks up as I can. I’m not here to let you forget what you’re doing to the earth or your body (and mental health), I’m here to howl in the hope it makes your skull ring like a dropped cup.

The clam-shell holding those dates was/is a frustration. We’ll reuse it within the house, but if you’re looking for zero-waste options try to avoid these non-recyclable jerks. Local honey in a glass jar is a good reusable, low-waste option. Same with pure maple syrup.

You take the buttery/cheesy flavor of Bragg’s Nutritional Yeast, mix it with sweetened (by dates, in this case) oatmilk, and use the umami/smokey flavor of Aminos with the richness of vanilla to get the caramelized flavor you would’ve gotten from the browned up junk that’s bad for your heart.

Once they set, divide it in 3 length wise and then make 5 equal cuts width wise to get your 15 pieces.

If you’re new to dates, take note that you need to open it up and remove its pit. (I’m fully aware that I have the scruffy fingers that reflect I’m working my dream job at a greenhouse. 🌱💚 )
