We are steadily working through perpetual pillars of the Cappello household, and this one is a treasure loved by all.

I occasionally miss the pure white siren song of Jasmin rice, but that white fluff has nothing on this incredibly delicious and nutritious black rice. If you’re one of those folks who avoids non-white rice because you had brown and it was bitter and toothsome: black rice is nutty and delicious.

Most importantly, it is bursting with: protein (6 grams in 1/3 cup!), iron, minerals, and anthocyanin.

What the heck is anthocyanin? It is a purple flavonoid (part of your food rainbow) found in the hull of this rice, and it helps to prevent neuronal diseases, cardiovascular diseases, cancer, diabetes, and inflammation!

Throw all the dry ingredients in a pot, cover with water, stir, cover, wait. :-)

You can buy Black Rice at your local grocery store to give it a try; but for cost effectiveness, it’s best to buy it in bulk. We currently have a 22lb bag of it, so if you’re a local loved one looking for a cup: come ‘n’ knock on my door. :-)

Ditch the white stuff and give yourself 6 grams of protein full of flavor and nutrients. Cover it with more vegetables and some peanut sauce and you’ll have fuel to fly you through your day.
